Healthy Buckeye Balls

I could argue that there is no better combination that chocolate and peanut butter…aside from, maybe, the classic Peanut Butter and Jelly sandwich. Growing up, my favorite Christmas dessert was always Peanut Butter buckeyes. The creamy peanut butter center and chocolate coat has me drooling as we speak!

Lucky for you I have the healthier version that will satisfy all those cravings this holiday season. My version is low sugar and low carb. Check it out and let us know what you think

Ingredients:

  • 1 1/2 cups smooth peanut butter. I would recommend Wild Friends Peanut Butter Cashew blend with honey
  • 1/4 cup coconut oil, refined, soft but solid
  • 1/3 cup almond flour
  • 1/4 cup swerve powdered sugar
  • 1/2 tsp sea salt
  • 1 tsp pure vanilla extract
  • 2 cups of Lily’s Dark Chocolate Chips

Directions:

  1. In a large bow, mix together peanut butter and coconut oil
  2. In a separate bowl, combine almond flour, swerve, salt, and vanilla
  3. Fold dry ingredients into the bowl with the peanut butter and coconut oil
  4. Roll into 25 balls and place on parchment paper lined baking sheet. Place a toothpick in each one for ease of dipping
  5. Freeze for 30 minutes
  6. While the balls are freezing, melt your chocolate. Microwave in increments of 30 seconds, stirring often, until melted
  7. Once the balls are firm, remove them from the freezer and dip them into the chocolate. Then, place them back on the baking sheet and refrigerate once they’re all complete
  8. Enjoy!
