Valentine’s Day Treats

Black Bean Brownies:

Ingredients:

  • 1 (15 oz) can of black beans, rinsed and drained
  • 2 eggs or flax eggs (add an additional egg if you like cakier brownies!)
  • 1/2 of a large ripe avocado
  • 1 tablespoon melted coconut oil
  • 1/2 cup unsweetened cocoa powder plus 1 tablespoon
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoons pure vanilla extract
  • 2/3 cup coconut sugar or sub brown sugar (or sub 1/2 cup pure maple syrup)
  • 1/3 cup chocolate chips + 2 tablespoons for topping

 Directions:

  1. Preheat oven to 350 degrees F. Grease a 8×8 inch baking pan.
  2. Place all ingredients besides chocolate chips into blender or food processor. Process or puree until ingredients form a smooth batter. If the batter is WAY too thick and won’t process then add in a teaspoon or two of water. This batter needs to be very thick in order to produce fudgy brownies. Add in 1/3 cup chocolate chips and fold into batter.
  3. Pour batter into prepared pan, sprinkle with 2 tablespoons of remaining chocolate chips. You can also fold in nuts or swirl in peanut butter. Bake for 25-35 minutes or until knife inserted in center comes out somewhat clean and top of the brownies begin to crack. Cool pan completely on wire rack then cut into 12 delicious large brownies!

Baked Sweet Potato Donuts

Ingredients:

  • 3/4 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 1/2 cup cooked mashed sweet potato (from 1 medium to large sweet potato)
  • 1/4 cup pure maple syrup or coconut nectar
  • 1 large egg
  • 1 1/2 tablespoons coconut oil, melted and cooled (olive oil also works well)
  • 1 teaspoon vanilla extract
  • 2.5 oz 72% dark chocolate
  • 1/3 cup coconut flakes

Directions:

  1. Preheat oven to 350 degrees F. Grease a donut pan with nonstick cooking spray.
  2. In a large bowl, whisk together flour, baking powder, cinnamon, ginger and salt; set aside.
  3. In a separate bowl, mix together the sweet potato, maple syrup, egg, coconut oil and vanilla extract until smooth and creamy. Add wet ingredients to dry ingredients and mix until just combined. Avoid overmixing here as it can make the donuts tough instead of light and fluffy. Spoon the batter into the donut pan, filling almost to the top.
  4. Bake for 11-14 minutes or until cake tester comes out clean. Turn the donuts onto a wire rack to cool completely.
  5. Once donuts are cooled, melt chocolate in a small saucepan over very low heat; stir continuously until chocolate is melted. Once melted, transfer chocolate to a warm bowl and dip each donut in the chocolate, then transfer to a wire rack. Repeat with remaining donuts. Immediately top each donut with a tablespoon of coconut flakes.

5 Ingredient Nutella Cookies

Ingredients:

  • 1 cup nutella
  • 2 tablespoons brown sugar
  • 1 egg
  • 1/2 cup flour + 1 tablespoon
  • coarse sea salt for sprinkling

Directions:

  1. Preheat oven to 350 degrees F.
  2. Combine all ingredients besides salt in a large bowl with electric mixer until well combined. Place dough in freezer for 10 minutes.
  3. After 10 minutes roll dough into approximately 1-inch balls, place on ungreased baking sheet at least two inches apart and bake for 8-10 minutes. Remove from oven and let cool for a few minutes until cookies are set, then very carefully transfer to a wire rack. Generously sprinkle with sea salt.
